No-Bake Cheesecake Parfaits

No-Bake Cheesecake Parfaits

Layered cheesecake parfaits with a Nilla Wafer crust, a light whipped cream cheese filling, and your pick of fruit pie topping. No oven required.

Ingredients

For the Crust:

3/4 cup Nilla Wafer crumbs
2 T melted butter

For the cheesecake filling:

3/4 cup heavy cream
8 oz cream cheese
2 T plain Greek yogurt
1/4 cup granulated sugar
2 t vanilla extract

For the topping:

1 21 oz can pie filling & topping of choice (strawberry, cherry, blueberry)

Garnish:

Store bought whipped cream in the can

Instructions

  1. Combine Nilla Wafer crumbs and melted butter.

  2. Add crumb mixture to the base of your serving containers. This recipe will fill 2 large drinking cups or 4-5 smaller jars.

  3. Using an electric mixer, whip heavy cream until stiff peaks form. Transfer to a bowl.

  4. Using an electric mixer, whip cream cheese, yogurt, vanilla, and sugar until it gets really smooth.

  5. Gently fold the whipped cream into the cream cheese mixture.

  6. Spoon the mixture into the serving container, followed by a spoonful of pie filling, then mixture, then pie filling, finishing with a layer of the cream cheese mixture.

  7. Chill for at least one hour.

  8. When ready to serve, add a dollop of store bought whipped cream to the top.
